1 Coconut, shell removed and flesh grated (or 2.5 ounces fresh grated coconut)
1-12 cups hot, simmered (not boiling) water
Place the coconut in a heat-proof bow. Cover with hot water and stir. Let cool to room temperature.
Place a strainer over a large bowl. Line it with a double layer of cheesecloth. Pour the soaked coconut with its liquid into the lined strainer. Lift the cheesecloth, pull the edges together, and squeeze out the coconut milk. Refrigerate the coconut milk.
Then air-dry the remaining coconut flesh or toasted for other uses.
10-2/3 cups instant nonfat powdered milk
1 (6-ounce) jar powdered nondairy creamer
4 cups powdered sugar
2 cups unsweetened cocoa powder
1 bag mini marshmallows
Combine all ingredients in a large bowl and stir gently to mix well. Store in an airtight container in a cool dark place. This makes 17 cups of mix.
For one serving, stir 3 tablespoons mix into 1 cup of hot water until dissolved. You can use hot milk in place of the hot water for a richer taste.
